Sometimes all I want is some comfort food and chocolate! You know when! Don’t you? These Dark Chocolate Banana muffins are super simple and sometimes that’s ALL I want! No fuss, no muss!
Don’t get me wrong, I love gourmet food but I also love just plain, old comfort food for those days when you don’t want anything complicated. I always have these ingredients in the house. In fact, I stock-pile ripe bananas in my fridge for just those times.
Here’s a secret I learned way back. Do you know you can put bananas in the freezer in their peels when they are brown and over-ripe but you don’t have time to bake right then? You can take them out another day, defrost them and mash them when you are ready to make and enjoy a craving for dark chocolate banana muffins or cake!
At our house though, we hardly ever have over ripe brown bananas as bananas are my middle son’s favourite fruit! Whenever I see them at the supermarket, I just buy bulk ripe bananas on sale and store them in the freezer. When I do that I will actually mashed bananas in 1 cup servings and put them in the freezer for those days when I’m desperately looking for a sweet chocolate and banana treat with my tea!

- 6 TB melted butter or oil
- ½ cup maple syrup or honey
- 1 egg, beaten
- 1 cup mashed bananas
- 1 tsp vanilla
- 1½ cups whole wheat flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp baking powder
- ½ cup dark chocolate chips
- Mash banana, add oil or butter, salt, syrup or honey, vanilla and egg and beat well by hand.
- Stir in dry ingredients and chocolate chips.
- Bake at 350 degrees for 15-20 minutes or until a tooth pick inserted into muffins comes out clean.

Your muffins look great and I always need a way to use up ripe bananas. We have a very narrow tolerance for banana ripeness at our house, and after that, they are ready for muffins, breads, or smoothies. I’ve pinned your recipe and can’t wait to give it a try. Thanks for sharing.

This is absolutely awesome Sandra and I have an ironic story for you. Almost two years ago a girlfriend of mine at work told me her sweets kryptonite is chocolate chip banana muffins. I made a note in an email to myself. Two weeks ago I was doing a heavy clean out of my Inbox at work and came across that note. Well, THE VERY NEXT DAY…a different gal in a different department that I happened to be in brought in a dozen, huge….you guessed it….chocolate chip banana muffins!! I screeched out loud pleading that I could have one which she said no problem. I took it to that gal that I work with and she did back flips of sugary excitement! And looky here….YOUR recipe!!! Dang, I wonder if I’m going to wind up getting a date after she finds out I MADE her one this time! This recipe made my day…thank you! 🙂

Hi Sandra, I just wanted to let you know that I finally found the time to bake these this morning and they are delicious. I am going to bake some more later in the week, double the recipe, and put them in the freezer to pull out for snacks. As I said I baked them this morning and now there are only 3 left. Boys!
