Pumpkin, Date and Chia Muffins

Serves: 12-15
- 1 TB ground chia seeds
- 1½ cups whole wheat flour
- 2 tsp baking soda
- ½ tsp cardamom
- ½ tsp salt
- 1 cup pumpkin puree
- 1 cup unsweetened organic apple sauce
- 1 egg
- ½ cup raw honey or maple syrup
- 2 tsp orange juice
- 1 tsp orange zest
- 1 TB vanilla extract
- ½ cup chopped dates
- Mix all the dry ingredients in one bowl and the wet ingredients in another bowl.
- Fold the wet ingredients into the dry ingredients.
- Scoop into greased muffin tins or into muffin liners.
- Bake at 350 degrees for 15-20 mins.
- Prick toothpick into muffin to check for doneness.
- Let cool in muffin tray for 5 mins.
- Then cool on cookie tray.
