Pumpkin, Date and Chia Muffins

Ingredients
  • 1 TB ground chia seeds
  • 1½ cups whole wheat flour
  • 2 tsp baking soda
  • ½ tsp cardamom
  • ½ tsp salt
  • 1 cup pumpkin puree
  • 1 cup unsweetened organic apple sauce
  • 1 egg
  • ½ cup raw honey or maple syrup
  • 2 tsp orange juice
  • 1 tsp orange zest
  • 1 TB vanilla extract
  • ½ cup chopped dates
Instructions
  1. Mix all the dry ingredients in one bowl and the wet ingredients in another bowl.
  2. Fold the wet ingredients into the dry ingredients.
  3. Scoop into greased muffin tins or into muffin liners.
  4. Bake at 350 degrees for 15-20 mins.
  5. Prick toothpick into muffin to check for doneness.
  6. Let cool in muffin tray for 5 mins.
  7. Then cool on cookie tray.
