Leek, Potato and Chick Pea Soup

This is a warming soup that can be eaten for lunch with a salad or as a meatless meal for supper.

  • 12 oz of chick peas, cooked
  • 2 potatoes, peeled and chopped
  • 2 TB olive oil
  • 3 leeks, chopped
  • ½ onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups vegetable stock
  1. In a pot boil the potatoes in water until the potato is soft. Add the cooked chick peas at the end to warm. Drain.
  2. In a skillet heat the oil and add the leeks, onion, and garlic and heat for 5-10 mins.
  3. Add the vegetables to the chickpeas and potatoes
  4. Add 4 cups of stock and simmer for 15 minutes
  5. Blend half the mixture with a hand mixture or blender and return to the pot.
